Method
- Start the broth: place whole chicken in stockpot, cover with 10 cups cold water. Add carrots, celery, onion, garlic, bay leaves, peppercorns, thyme.
- Simmer low and slow: bring to a gentle boil, reduce to the barest simmer. Skim foam in first 20 minutes. Simmer 1 hour 15 minutes until chicken is fall-apart tender.
- Strain: lift out chicken; strain broth through fine-mesh strainer; discard vegetables.
- Shred the chicken: pull meat from bones, discard skin and bones; shred into bite-sized pieces.
- Sauté vegetables: melt butter, cook onion, carrots, celery 6-7 minutes.
- Build the soup: pour strained broth back in, bring to gentle boil, add noodles, cook 8-10 minutes.
- Finish: stir in chicken, parsley, lemon juice; simmer 2 minutes; season boldly with salt and pepper.
Notes
Never let the broth boil hard — the barest lazy simmer gives crystal-clear golden broth.
